Oh Were, Oh Were & Crock-Pot Chicken Spectacular

      Oh were Oh were are my warm summer days, Oh were, Oh were could they be. With 12 hours of sun beating down on the sand, Oh were Oh were can they be. Yes I could go on and on, from warm sunny sandy beaches, to swimmable water temperatures, (No I am not a true native Cape Codder and no I don't swim in the Bay even in the summer, I am a softy and like my warmer waters.) The scent of coconut lotion wafting through the air to golden tanned bodies laying on beach blankets. Light breezes that are warm and just cool off the day and not so cold that they could freeze Follins Pond. Yes I am already longing for the warmer weather months back, and the ability to sit out on my deck and watch the stars late into the evening, without having to bundle up like Na-nuke of the North. Why, already this season is seeming to be cooler than last year I am not sure, but I don't like it, the cold that is. However the turning from Summer to Fall is always beautiful and the return of delicious shell fish, freshly, picked, harvested, dug whatever and on my plate within hours. So there are some benefits to this time of year. Ok, so there are a few others, you can make left hand turns, you can go to dinner without an hour plus wait or making reservations. Or feeling like I am getting run over for a bargain at Christmas Tree Shop or while walking down Main street in Chatham on a weekend. But my heating bill keeps coming back to warm summer days, with the windows open and a light breeze blowing through the house. Oh the price of living in Paradise during the cooler months of the year.
      It's one thing to vacation here on the Cape and long to come back to it's refreshing beaches and warm seasonal values. Yet it is quit a different thing to live here see the seasons come and go and live through the changes and really appreciate the warmer months as well as the changing seasons. Oh were, Oh were, well somewhere down the weeks and months, but they will return, and we will be able to turn off the heat again and open the windows. Until then, bundle up, through an extra log on the fire if you have one, seal up any windows and doors that are not being used to keep the cold out and the warmth in and definitely put an extra blanket on the bed.
      For a community update, the Wellfleet 246 Community Kitchen at the Wellfleet United Methodist Church will be offering Sunday Breakfast beginning at 9:30 am. No you are not required to attend the church or the service, but you are definitely invited to stay for the contemporary service at 10:30. Dinner on 11-21 between the hours of 5:30 and 7 will be Pasta with marinara sauce either with or without meat. Than on Thanksgiving they will be serving dinner of Turkey or Ham and will even offer a Vegetarian option. So if you are in need, or if you know of someone in need, let them know. If you can donate, give the church a call and they will connect you with the right people. To whom much is given, much is required, what are you doing to help those in need around you. And what better than to do it locally where you can see what your dollars are going for and doing.
      Ok, just a week until Thanksgiving, making sure the lighthouse is spiffied up an extra bit for all the visitor heading our way. Making sure the lens is spotless and an extra portion of oil is in the wells so that the light will not go out. Hope you have a wonderful week, and be safe if you are traveling. I have my kids coming in from Ohio and look forward to seeing them. I will be here next Thursday as usual, Lord willing the creek don't rise and the rip tides don't sweep us out to sea.       I love easy recipes, and this time of year it is imperative to have these around as we do not need to be waisting any more time in the kitchen then necessary as we will be in there enough on holiday festivities. And this little gem can be increased easily for larger groups. So as we get closer to the holidays, be sure to do some budget and menu planning so you run yourself into the poor house or out of your mind trying to come up with dinners on the spire of the moment a day or two before or after the holidays.       This weeks recipe: Crock-Pot Chicken Spectacular

  •       3   cups   chicken diced
  •       2   cups   cooked rice
  •   1/2   cup    mayonnaise
  •       2   Tbsp  finely chopped onion
  •       1   can    cut green beans, drained (16 oz)
  •       1   can    cream of celery soup
  •       1   can    sliced water chestnuts, drained (16 oz)

      Combine all ingredients. Pour into greased crock pot. Cover and cook on low 4-8 hours.
