I have not done this much folks, but I am cutting this round short folks. Please note in the Keepers report and that will explain why the scaled back blog for this week. The one things I did promise you a long time ago was, I might not get much of a report in but I would provide you with a recipe and I think we got you a good one this week. Sorry folks, but the business report is rather slim picking, since the keepers surgery we have not been out much and not seeing that happening for a few weeks. But we will get back into the reporting here in the next week or so as we run across those special places we find unique and doing a great job for the Cape.
I hope you have had a great last week. For me here in the lighthouse, well, let's just say it has been a long week with back surgery. The surgery went well, and I am back home now. However they surgery was suppose to be about 3 hrs ish and ended up more like 6 hrs ish. So my old body is feeling every bit of an old beat up skiff that you wouldn't trust in a greatest of days let alone any turbulent weather. (LOL- I have to laugh cause if I don't I will cry and not sure which hurts worse right now LOL). Anywho, the surgery although took longer than expected went very well per my surgeon, and at least got me out of the hospital to rest and heal at home. Fortunately the weather has been good and even looks good for the next week. No weird storms, no freezing tempts, nothing that would cause alarm, maybe someone does like me a little. Anyway, with all that, I do have help here to get me through, and the kids are doing a wonderful job helping to keep the place tidied up and me well fed. I could not have done it without them. This is still going to be one massively long haul to full healing but with this kind of weather and help I should be in good shape. Well have a great day and great week. Try not to get into any trouble and please keep an eye out on your neighbors. We will see you once the seasons have changed and we are really on the other side of warmer around here.
Well as I have already told you, cakes are not my favorite dessert, however pound cakes I don't put into really cake recipes and you can have pound cake at any time of the day, not just for dessert. With that, I love my old churches collection of recipes. First I know all the people who sent in recipes and help collaborate it and second I know those folks that I really enjoyed eating their food. And this is one of those those that the dear lady was not only a fun person to be around but was a good cook as well. The other thing about this recipe is, it is easy to make and not many ingredients, which fits nicely into my theme for Cape Cottage Kitchens. Well give this one a try I think you will like it and find as tasty as it is easy to make. Now on with the show:
This week's recipe: Chocolate Chip Pound Cake
1 mix Chocolate Cake
4 each eggs
1 1/4 cups water
1 box instant chocolate pudding
2/3 cup oil
1 pkg chocolate chips (12 oz pkg)
Preheat oven to 325 degrees. Grease and flour a bundt pan (remember the heavier ones are better). Mix cake mix, eggs, water, pudding, and oil until blended. Stir in chocolate chips. Pour into prepared pan and bake for 45-50 minutes until cake tests done. Let cool at least 10 minutes in pan and then remove cake from pan and continue to cool on rack. Cake can be served with whipped cream and berries. If you prefer to ice the cake, melt either chocolate fudge ice cream topping (45 seconds) or 1/2 container of store bought icing (20 seconds) in the microwave until it is the right consistency to drizzle over the top and down the sides of the cake.
