When life does not deal you the cards that you were expecting what do you do? Interesting, that over the last year I have had the misfortune of having 3 back surgeries. One basically an emergency service, the second, a less evasive procedure hoping and praying that it would do the trick an fix what was not able to done the first surgery. Then finally the third, yup the big kahuna, the una tuna filleter procedure. Although we knew that procedure 2 was a long shot, it was one of those things that you just have to take the chance and hope and pray that it will work, knowing that the odds are really not in your favor that it is going to work. Round 3 did have to happen, and no it was not fun, it is not something I would ever wish on someone but I will say I can already feel changes from prior to. So from that aspect I have to be very appreciative of. Many folks have asked oh you went to Boston right? No I did not, and after some post follow up research Cape Cod Hospital is considered one of the best Orthopedic and Neuro facilities in all of New England. And my doctor, well I can not say enough good things about him.
Most people at this time of year are starting to plan for their summer vacations, where they are going to go, what they want to do. Do we get a house to rent or a cottage just steps from the Nantucket Sound. Do we want to whale watching this year, or maybe go on a fishing charter, or how about a shark watching trip. Maybe you have never been to the Islands, and think its about time to take a visit. Me, (LOL) I get another summer of back healing. No I am not bitter, A little disappointed yes, but I get it that I am very fortunate. My point is, that maybe you are going to get to come to the Cape for as long as you want, you may not be able to do everything you want to do, You may not get to eat out all the time, please stop worrying about what you can't do and enjoy what you can come and do. Start now looking at what you can do for free. Bike and hiking trails. those alone could keep you busy for some time. There are craft shows just about every weekend from Memorial Day through Columbus Day. Depending on where your staying you may be able to walk to or which a bike to a beach. and the list goes on and one. So although you may not be able to do everything you want, start planning now and make it the best summer vacations every on the skinniest budget you could ever think of. So from me to you, I hope to see you this summer and from now till then have a most wonderful and exciting time planning your next trip to this paradise we call old Cape Cod.
Business report: I feel like I should be reporting on my doctors and hospital since I have seen them more than I have been out of the house over the past 3 weeks. But we were able to get to Jason's Tavern in an anniversary dinner last week. If you are not familiar with Jason's it is located in Patriot Square in South Dennis on 134. They are a down to earth family restaurant that is reasonably priced, have a great early bird menu and have consistently good food. I can not say enough about this place as a last minute go to place when you just want to go out and grab a good bite to eat. And the better this is they are open year round.
Well like the weather, the report from the keepers quarters and the lighthouse are a little boring. I will say I am still on the mend and I am seeing some improvement in different areas. The problem is although there are good things happening that means I want to do more around the lighthouse, and that is still a very big no, no. So I am still relying on some very faithful and kind volunteers to help keep me out of doing what I should not be doing, like carrying anything over 5 pounds. But I can still take my time on the radar and radio, and I can still respond to email inquiries and do the daily logs. But other than that I am still waiting for that next "Big" winter snow to hit, I can feel it, and since this last surgery, I feel things much more sensitive than before. So hopefully this time next week I will not be talking to you from 6 feet under. However I will say we continue to be blessed without having any major ocean emergencies and pray we keep it that way through the rest of the season. Well. the last thing to say is, think spring, think warm and let's hope that we can put this cold behind us very very soon. As you know I am always looking for new and interesting salads. I love Snap peas especially raw and I am a big fan of radishes. So when I saw this combination I really fell in love with it and thought it would be a fun and easy recipe to share. If you like something a little different this is it. Have fun with it, and enjoy.
This week's recipe: Snap Pea Salad with Radish & Lime
2 cups sugar snap peas, trimmed and halved
3 cups wax beans trimmed and cut into 1 inch strips
3 Tbls lime juice
2 Tbls EVOO (Olive Oil)
1/2 cup fresh cilantro, chopped
1/4 tsp salt
1 bunch radishes, trimmed and thinly sliced (about 10)
Steam peas over 2 inches of boiling water, stirring once, until crisp-tender, 4 to 5 minutes. Transfer to a baking sheet lined with paper towel. Steam wax beans until crisp-tender, about 5 minutes. Transfer to the baking sheet. Refrigerate until chilled, about 20 minutes.
Whisk lime juice, oil, cilantro, salt and pepper in a large bowl. Add radishes, peas and beans; toss to coat. Serve chilled.
